Denis is a third generation winemaker following only methods and techniques of his forefathers in the most natural way. At Vinarija Križ, the vineyard consits of 2 south facing hectares, located on the Pelješac peninsula in southern Dalmatia, Croatia. The conditions in the vineyards are extreme. Denis cultivates 60 years-old, very low trained bush vines, in order to protect the fruit from the sun. His vines naturally yield very low with only 0,5kg/vines. On the 45-degree steep, rocky dolomite sand and limestone soil, Denis can only work by hand. Following the traditions at the Kriz Vinery, Denis cultivates only indigenous varieties such as Plavac Mali and the rare Grk.
Denis’ work in the cellar is just as natural as his approach in the vineyard. He vinifies in old untoasted Slavonian oak barrel with long lees contact, focusing on purity and freshness. His goal is to grow the healthiest low yield Plavac Mali in the region and to follow his intuition in the cellar. The rest, as he says, “is easy”.
