The grapes for the AEON wines come from the oldest vineyards, that have been in the family’s hand for generations.
Alex uses a more hands off approach here - the barrels are not topped up and age under flor. Delivering a wine with charming complex minerality, enticing aromas of lime peel and peach paired with a hint of almond great structure with depth of character and long finish.

Vinification
Grapes were directly pressed, and juice went straight into old Barriques (225L). The wines matured on gross lees for 10 months without any additives or temperature control. Barrels are not topped up and age oxidatively under flor. Bottled unfiltered, unfined without the addition of sulfur.
