Vinification

Whole bunches are slowly direct pressed in a vertical basket press. Juice goes straight into fibreglass and stainless steel tanks. All 5 components of ROZSA were mostly co-fermenting and matured on gross lees for 6 months. Bottled without fining and without filtration or addition of sulphites.
