Vinification

This is the second harvest from a young plantation. After hand de-stemming the grapes ferment on the skins for 8 days with very gentle extraction. Pressed into two small oak barrels where it stays on the lees for 10 month. Bottled unfined, unfiltered without the addition of SO2.
