Vinification

Whole bunches, mixed with de-stemmed grapes are fermented in an open vat for 14 days, after which they are gently pressed and aged in used oak barrels on fine lees for 8 months. Bottled unfined, unfiltered with minimum amount of sulphur before bottling.
