Vinification

After harvest, the Riesling the grapes are left as whole bunches, half in small used barrels and half in stainless steel. The bunches are foot stomped and then gently pressed. Fermentation takes 6 months and after that the juice chills out for a bit further. Like the other cuvee’s this wine has seen an elevage of roughly 9 months before being blended at bottling, without filtration or additives.
