Vinification
The grapes for the Weissburgunder (Pinot Blanc) come from a highly wheathered red slate plot giving the wine immense mineral backbone. After harvesting the Weissburgunder grapes through semi-carbonic fermentation for a week and are then gently pressed. The juice continued fermentation and maturing until June in old barrique. Like the other cuvee’s this wine has seen an elevage of roughly 9 months before being blended at bottling, without filtration or additives.
