Vinification

The bunches were direct pressed, the juice then spontaneously started fermenting in stainless steel tanks and got bottled before the fermentation would have finished (around 15 g/l of sugar) In early spring it has been disgorged by hand. Unfined, unfiltered with no addition of SO2.
