Vinification

The grapes are hand harvested, then de-stemmed, crushed and left to macerate for 12 hours. After pressing the juice was spontaneously fermented in steel tanks. After 8 months maturing, it was bottled without fining or filtration with a little bit of sulphur. 2016 produced wines with vibrant acidity.
