Vinification

The grapes are de-stemmed and fermented in open wooden fermenters for 2 weeks with gentle extraction. The wine is matured in used, steamed Slavonian oak barrels of 350l for a year and spends another 6 months in bottle before being released. Unfiltered, unfined and only a touch of SO2 added at bottling.
