Vinification

The Riesling bunches are harvested and placed into a vat. Maxi then jumpes into the vat and gives it a little stomp before pressing the juice directly into a “Stuckfass” 1200L oak. There it matures for 18 months. Bottled unfiltered, unfined with a pinch of sulphites
