Vinification
This cuvee comes from a notably intense section of the steep vineyard, where rain has eroded the loam, leaving primarily gravel behind. Achieving optimal ripeness is a challenge here, often requiring six separate harvest passes due to the slope. The grapes undergo direct pressing, and the juice ferments and matures for eight months in a combination of amphoras and used French and Austrian oak barrels. It is bottled without fining, filtration, or the addition of sulfur.
