Vinification
This wine is crafted using a technique known as "trompette," where half of the Merlot grapes are direct pressed, while the other half, left as uncrushed whole bunches, are soaked in the pressed juice, creating an infusion. After 10 days of maceration, the remaining grapes are then pressed. The wine is aged in stainless steel for 8 months, allowing it to develop a refined character while maintaining fresh, vibrant fruit notes. Bottled without fining, filtration or the additions of sulphur.
