Vinification

Zweigelt mix of de-stemmed and whole bunch clusters in open vat fermenters for two weeks then aged in 4000L old oak barrels. Fermentation takes place spontaneously without adding artificial yeast. A little bit of white wine may spill into the blend to give it a little extra freshness.
